Coconut Fudge Date Granola Bar Recipe

Here's what you'll need:

  • ½ cup walnuts
  • ½ cup almond crumbs
  • 1 ½ cups pitted dates
  • 1 tsp pure vanilla extract
  • 1 drop of almond extract or any other (optional)
  • 3-4 tbsp cocoa powder
  • 1 tsp salt
  • 1/3 cup unsweetened coconut
  • 1 handful of dried cranberries
  • 1 handful of dark chocolate chips

 

Directions:

  1. Mix the nuts, dates, vanilla, salt, and cocoa powder in a food processor or blender. If the dates are dry, you may need to add up to 1 tbsp of water.
  2. Stir in the cranberries, coconut, and dark chocolate chips.
  3. Empty the mixture onto saran wrap and use it to mould it into a flat rectangle. Cut into bars.
  4. Chill the protein bars in the fridge or freezer for at least 15 minutes.

 

Healthy Homemade Granola Bars

These bars are best eaten chilled from the fridge or freezer. They keep their shape for about 30 minutes once removed.

These ingredients are by no means definite. You can swap out the nuts and fruits to find a flavour combination you love! As long as your nut combo totals 1 cup, you should be good to go.
